In a large pot, heat some oil over medium heat. Add the pork chops and sear them until browned on both sides. Remove the pork chops from the pot and set them aside.
In the same pot, add the chopped onions, carrots, and celery. Sauté until the vegetables are tender.
Add garlic, ginger, and spices like salt, pepper, and thyme. Stir well to combine.
Pour in the chicken broth and water, then bring the mixture to a boil.
Reduce the heat to low and return the pork chops to the pot. Cover and simmer for about 45 minutes, or until the pork chops are tender.
While the soup is simmering, cook the noodles separately according to package instructions. Drain and set aside.
Once the pork chops are tender, remove them from the pot and let them cool slightly. Cut the meat into bite-sized pieces and discard any bones.
Return the pork pieces to the pot, and add the cooked noodles. Stir well to combine, and let the soup simmer for another 5 minutes to allow the flavors to meld together.
